Duet is a soft, pasteurized goat’s milk cheese infused with seasonal herbs and crafted by Soyoung Scanlan of Andante Dairy. Inspired by the rosemary growing in her garden, Soyoung developed this cheese to capture the quiet, uplifting scent of fresh herbs—something subtle, yet emotionally resonant. The process begins with steeping the herb in warm milk to gently extract flavor before curdling. This infusion slightly thickens the milk, giving Duet a denser texture than other Andante goat cheeses. The top of each piece is adorned with the herb used in the batch, making each one a true duet of milk and season.
Serving: Bring to room temperature before serving to allow texture to soften and herbal aromatics to emerge. Enjoy with fresh greens, fruit, or crusty bread.
