His son Will traveled back to Maggia, Switzerland to taste the local cheeses, and the family began making their own in 2010 with help from Maggia cheesemaker Maurizio Lorenzetti. Their entire herd is certified organic and rotationally grazed. San Geronimo, created in 2011, is a washed-curd cheese: whey is replaced with water during production to lower acidity and keep the flavor mild. Wheels are then brine-washed, which gives the thin rind its yellow-orange color and savory aroma.
