VINIFICATION: Produced using the saignée method, where the juice is macerated with the grape skins for 36 hours to extract color and flavor. Vinification and aging on lees, partially in 228L barrels. For this harvest, a 36-
hour maceration was carried out, with 50% 100% destemmed Pinot Noir and
50% crushed Chardonnay. The idea was to blend the two in the maceration tank to allow the Pinot Noir to gently color the Chardonnay.
- AGING: Aged on lees for several months to develop complexity, with a dosage of 7 g/L, classifying it as Brut.
- TASTING NOTES: Salmon pink with fine bubbles. Aromas of ripe red fruits, including raspberries and strawberries, with floral undertones. On the palate, it is refined and elegant, delivering bright red fruit flavors balanced by crisp acidity and a smooth finish.
