- FARMING: Sustainable practices following organic principles without formal certification. The estate is described as très lutte raisonnée (very reasoned struggle). No herbicides are used; vineyards are manually ploughed with regular light aeration to encourage deep root growth. Strict debudding maintains low yields. Hand-harvesting at optimal ripeness.

- TERROIR: The En Remilly vineyard is situated on the southwest-facing flank of the Montrachet hill and is widely recognized as one of the finest Premier Cru sites in Saint-Aubin. Located at the southern end of the appellation, it borders the legendary Grand Cru vineyards of Puligny-Montrachet, specifically Chevalier-Montrachet. The Bachelet brothers farm just over 0.4 hectares of 30-50-year-old vines. The terroir features shallow, very stony, calcareous soils with pebbly limestone topsoil that drains freely, forcing vines to root deeply into the limestone bedrock. This geological composition is remarkably similar to Montrachet and Chevalier-Montrachet. The vineyard's south-to-southwest exposure and elevated position provide ideal ripening conditions while maintaining natural freshness and pronounced minerality.
- VINIFICATION: Long press cycle lasting approximately three hours to naturally select fine lees. Fermentation with indigenous yeasts in 350-liter barrels (20% new oak). No débourbage (settling) or bâtonnage (lees stirring).
- AGING: 12 months in barrel followed by 6 months in stainless steel tanks to preserve freshness and finesse.
- TASTING NOTES: Aromas of green apple, citrus zest, wet limestone, and white flowers with pronounced mineral and flinty character. The palate displays exceptional purity and balance with crisp acidity, medium body, and laser-like precision. Flavors of lemon, pear, subtle hazelnut, and crushed stone lead to a long, chalky, mineral-driven finish.
