Brick & Mortar created their first sparkling wines in 2015, and today 50% of their production is sparkling wine. In 2019, they brought all sparkling wine production in-house—a rarity in California for small producers. Their sparkling wines are made in the traditional method with extended lees aging, reflecting their love of vintage Champagne.

- VARIETY: 50% Pinot Noir and 50% Chardonany
- TERROIR: Cool-climate Sonoma Coast vineyards benefit from Pacific Ocean influence, creating ideal conditions for sparkling wine production. The challenging climate enables fruit to ripen to maturity while keeping sugars naturally low.
- VINIFICATION: Traditional method (méthode champenoise). Early picking to preserve the fruit's integrity. Native yeast fermentation.
- AGING: Extended lees aging to add complexity and roundness.
- TASTING NOTES: Elegant and crisp, showcasing bright red fruit, floral notes, and refreshing acidity. The mousse is fine and persistent, with flavors of strawberry, citrus, and subtle minerality. Bright and celebratory with excellent balance.
