Cave de la Côte ‘Swissness’ Chasselas, Vaud, Switzerland 2024
A cooperative winery founded in 1929 in the heart of the La Côte region on the north shore of Lake Geneva. It vinifies several of Switzerland’s leading estates, including Château de Malessert, Château La Bâtie, Domaine Kursner and Château d’Echichens. The cooperative has moved steadily toward organic viticulture.
- FARMING: Practicing Organic
- VARIETY: Chasselas
- TERROIR: La Côte, Vaud, Switzerland. Vineyards sit between Lake Geneva to the south and the Jura mountains to the north, which shelter them from wind. The lake moderates temperatures.
- VINIFICATION: Gentle pressing followed by temperature-controlled fermentation to preserve fresh fruit and minerality.
- TASTING NOTES: Floral aromas of white peach and lime blossom, with a mineral edge. The palate is crisp and fresh, with white fruit and pineapple notes. A light, lively effervescence gives it a smooth, bubbly acidity.
- FOOD PAIRINGS: An aperitif wine, suited to afternoon drinking or before dinner. Pairs with light tapas, charcuterie and melon with prosciutto. The Swiss importer copy also suggests fondue and raclette.
