Folk Machine is the small-production label of Hobo Wine Company, founded in 2002 in Santa Rosa by Kenny Likitprakong. Kenny sources from growers across California rather than owning vineyards, and this blend is a long-running house white built around fresh acidity and a briny, mineral character.
- WINEMAKER: Kenny Likitprakong
- FARMING: Practicing Organic
- VARIETY: Tocai Friulano (27%), Verdelho (26%), Vermentino (26%), Albariño (16%), Sauvignon Blanc (5%)
- TERROIR: Blended from multiple California sites, including Talmage Bench, Borden Ranch, Clements Hills, and Potter Valley.
- VINIFICATION: Spontaneous fermentation in stainless steel. Components were blended as each fermentation finished. Partial malolactic fermentation.
- AGING: No oak. Bottled early with a touch of residual CO2.
- TASTING NOTES: Lightly aromatic and textural, not especially dry or fruity. Fresh and acid-driven, with saline, briny minerality. Notes of citrus, orchard fruit and white flowers, finishing clean.
- FOOD PAIRINGS: Oysters, ceviche, spicy Asian dishes, summer salads, and fresh cheeses. Also works as an aperitif.
