- TERROIR: The 'Atlas Peak West' vineyard is situated in the cooler, elevated regions of Napa Valley, where the Cabernet Sauvignon thrives in volcanic soils and a mix of rocky and clay loams (Hambright and Guenoc). The site’s high elevation (about 1,500 feet) promotes a long growing season, allowing the grapes to ripen slowly and develop complex flavors.
- VINIFICATION: Hand-harvested, the grapes undergo fermentation with native yeasts in small open-top fermenters. The wine is then gently pressed and aged in French oak barrels, with around 40% new oak, to preserve the purity of the fruit while imparting subtle oak nuances.
- AGING: 19 months in French oak barrels (40% new oak)
- TASTING NOTES: The 2021 'Atlas Peak West' Cabernet Sauvignon is a rich, full-bodied wine that opens with aromas of ripe black currant, blackberry, and hints of cedar and tobacco. The palate is layered with flavors of dark chocolate, cassis, and a touch of espresso, supported by firm tannins and a vibrant acidity. The finish is long, with a fine balance between fruit and oak.
