Vault 5 is a premium, clothbound cheddar selected by Cabot Creamery and aged in the Cellars at Jasper Hill, where it develops its signature flavor profile in a carefully controlled environment. Named for the specific aging vault where it matures, Vault 5 showcases a bold, savory-sweet balance with pronounced umami, sharp cheddar tang, and notes of toasted nuts, pineapple, and brown butter. The texture is firm and slightly crumbly, with occasional protein crystals that signal long aging and complexity.
Serving: Wrap in cheese paper and refrigerate at 32º–44.6ºF. Let come to room temperature for 45 minutes before serving to fully unlock the depth of flavor and crumbly texture.
