Margarethenhof Riesling Kabinett, Mosel, Germany 2025
A family estate in Ayl on the Saar, run by the Weber family since the winery was founded in 1986 under the Margarethenhof label. Nicolas Weber returned from a winemaking post in South Africa in 2020 and has led the cellar since, focusing on fruit-driven, low-alcohol Rieslings, with single-vineyard wines from the steep Ayler Kupp.

- TERROIR: Ayl, Saar, Mosel, Germany. Slate soils (Schiefer) on the Saar.
- VINIFICATION: Hand-harvested fruit, whole-cluster pressed. Spontaneous fermentation in stainless steel. Fermentation is halted at a chosen level of residual sugar by chilling the tank, then sulfur is added.
- TASTING NOTES: Off-dry, fruit-forward Riesling with an elegant, juicy profile and a refreshing acid line. 9% ABV, 30 g/L residual sugar, 9 g/L acidity.
- FOOD PAIRINGS: Spicy Asian cuisine, Thai and Indian dishes, pork with apple, and soft cheeses. Also suited to aperitif service.
