Bettina Schumann is shaking up tradition in Baden with her bold, playful approach to German wine. Based in the volcanic Kaiserstuhl region, she focuses on Spätburgunder (Pinot Noir) and other Burgundian varieties, crafted with minimal intervention and a lot of personality. ‘Mittenmang’ is her signature rosé—named for the Berlin slang meaning “in the middle of it all”—and it captures her style perfectly: vibrant, unfiltered, and full of charm.
- WINEMAKER: Bettina Schumann
- FARMING: Sustainable with organic principles; hand-harvested
- VARIETY: 100% Spätburgunder (Pinot Noir)
- TERROIR: Volcanic loess and limestone soils in the Kaiserstuhl, a warm and sunny subregion of Baden near the Rhine River. The site brings both ripeness and mineral structure to the wine.
- VINIFICATION: Grapes are direct-pressed and fermented spontaneously with native yeasts in stainless steel. No fining, no unnecessary intervention.
- AGING: Aged for several months in stainless steel on fine lees for texture; bottled unfiltered with minimal sulfur
- TASTING NOTES: Deep salmon pink in color with aromas of wild strawberry, blood orange, rosehip, and sea spray. The palate is crisp and zippy with a core of red currant, grapefruit peel, and crushed herbs, finishing dry and savory.
- FOOD PAIRINGS: Sushi, spicy tuna tartare, watermelon + feta salad, or jamón ibérico and manchego.
