Each release in their 'La Bota' series is a unique bottling drawn from historic soleras, selected for their distinctive character and transparency of place.

FARMING: Sustainable
VARIETY: 100% Palomino Fino
TERROIR: Jerez de la Frontera, Andalucía; dominated by albariza soils—bright white, chalk-rich earth that retains moisture and imparts elegance, minerality, and salinity to the wines.
VINIFICATION: Native yeast fermentation; aged biologically under flor in the traditional solera and criadera system.
AGING: Drawn from a special solera at Hijos de Rainera Pérez Marín (producers of La Guita), this Fino is aged just over 6 years under flor, selected for its freshness and precision.
TASTING NOTES: Bright and nervy, with aromas of green apple, sea breeze, roasted hazelnuts, and chamomile. Intense salinity and electric acidity meet a silky texture on the palate, finishing long, clean, and bone dry.
FOOD PAIRINGS: Ideal with briny snacks like anchovies, jamón Ibérico, and fried calamari, or with dishes like ceviche, sushi, or hard sheep’s cheeses.
