Usually ready in 1 hour
Crafted by Daniel Vollenweider from vineyard parcels in the historic Wolfer Goldgrube, a steep, blue-slate site in the Middle Mosel, this Spätlese represents Mosel Riesling at its most refined. From old, ungrafted vines in the high-altitude Portz sector, this wine balances delicacy and depth with silky elegance and crystalline tension.
- WINEMAKER: Daniel Vollenweider
- FARMING: Organic (uncertified); hand-harvested from old, ungrafted vines
- VARIETY: 100% Riesling
- TERROIR: Wolfer Goldgrube is a steep amphitheater of weathered grey slate above the Mosel River near Traben-Trarbach. The ‘Portz’ parcel—source of this Spätlese—is southwest-facing and sits at higher elevation, contributing greater aromatic lift and slate-driven minerality.
- VINIFICATION: Grapes were hand-harvested at 91° Oechsle and gently whole-cluster pressed. Fermentation occurred spontaneously with native yeasts in old, neutral 1,000L Mosel Fuder barrels. No enzymes, no fining, and only minimal sulfur additions at bottling.
- AGING: Aged several months on fine lees in large-format neutral oak barrels (Fuder) to preserve freshness and build texture. Bottled in spring without filtration.
- TASTING NOTES: Elegant and expressive, with aromas of lime blossom, mirabelle plum, jasmine, and smoky slate. The palate is filigreed and precise, balancing crystalline sweetness with racy acidity. Notes of pear skin, candied ginger, orange oil, and sea salt linger on the long, vibrant finish.
-
FOOD PAIRINGS: Pair with pork tonkatsu, Thai basil chicken, stinky cheeses, or roast root vegetables.
