The H.W.C. bottling from Robert Mondavi’s “Spotlight Collection” pays tribute to Hamilton Walker Crabb, the visionary who first planted and named To Kalon in the late 1800s. This small-lot red blend originates from a specific block of heritage clones within the To Kalon Vineyard, crafted to honor the site’s lineage and Mondavi’s enduring connection to Oakville terroir.
- WINEMAKER: Geneviève Janssens (Director of Winemaking, Robert Mondavi Winery)
- FARMING: Sustainably and organically farmed parcels within the To Kalon Vineyard, cultivated under Napa Green and Certified California Sustainable Winegrowing (CCSW) protocols. Fruit is hand-harvested and cluster-sorted in the vineyard.
- VARIETY: Predominantly Cabernet Sauvignon with smaller proportions of Cabernet Franc and Petit Verdot from heritage clone selections rooted in H.W. Crabb’s original plant material.
- TERROIR: The H.W.C. block lies on the western side of Oakville within the legendary To Kalon Vineyard, composed of alluvial, gravelly loam soils over ancient riverbed deposits. These soils provide excellent drainage and moderate vigor, while the site’s afternoon sun and cool evening breezes from the Mayacamas Mountains lend concentration, balance, and aromatic finesse.
- VINIFICATION: The grapes were hand-harvested at optimal phenolic ripeness and fully destemmed before undergoing a short cold soak. Fermentation took place in small oak and stainless-steel tanks with a combination of pump-overs and délestage for gentle extraction. Native yeasts were encouraged where possible, and the lots remained on skins for extended maceration—up to four weeks—to enhance texture and depth. Malolactic fermentation occurred in barrel.
- AGING: The wine was aged for approximately twenty months in 100% French oak barriques, about two-thirds new, sourced from coopers favored for fine-grained, medium-toast barrels. After élevage, the blend was assembled and returned to barrel for integration before bottling without fining.
- TASTING NOTES: The 2015 H.W.C. To Kalon opens with dark aromas of cassis, blackberry compote, and black cherry interlaced with graphite, cocoa nib, and cedar spice. The palate is full and structured, showing ripe yet refined tannins and a long, persistent finish marked by savory minerality and freshness.
- FOOD PAIRINGS: Ideal with dry-aged ribeye, lamb loin, venison, or rich dishes featuring wild mushrooms
