La Soeur Cadette is the northern Burgundy project of Valentin Montanet, whose family also produces the highly regarded wines of Domaine de la Cadette in Vézelay. Guided by an ethos of organic farming and honest craftsmanship, Montanet’s wines celebrate the diversity of Burgundy through pure, terroir-driven bottlings made with minimal intervention and maximum clarity.
- WINEMAKER: Valentin Montanet
- FARMING: Certified Organic
- VARIETY: 100% Chardonnay
- TERROIR: Though based in the Vézelay area of northern Burgundy, fruit for this cuvée is sourced from the southern reaches of the region, where limestone-rich soils and slightly warmer exposures yield Chardonnay of both ripeness and minerality. This balance captures the essence of Burgundian terroir—tense, saline, and finely structured.
- VINIFICATION: Grapes are hand-harvested and fermented using native yeasts. Vinification is traditional and low-intervention, emphasizing freshness and texture over oak influence.
- AGING: Aged in stainless steel and neutral oak to maintain vibrancy and preserve its mineral-driven character.
- TASTING NOTES: Bright and precise, with aromas of green apple, citrus peel, and crushed stone. The palate is crisp and linear, balancing lively acidity with a subtle chalky texture. Elegant and restrained, it echoes the freshness of Chablis at an exceptional value.
- FOOD PAIRINGS: Ideal with oysters, grilled white fish, roast chicken, or creamy goat cheese. Serve chilled for maximum tension and lift.
