The vines, planted in the early 1950s, grow on steep, rocky limestone slopes rich in stones and clay-limestone colluvium, producing wines that balance ripe fruit with tension and minerality.
- VINIFICATION: Grapes are hand-harvested and vinified with minimal intervention. Fermentation occurs with native yeasts to preserve purity and site expression.
- AGING: Two-thirds of the cuvée ages 15 months in new, low-toast 350-liter oak barrels, while one-third matures in terracotta jar to maintain freshness and texture. The wine is then blended and allowed to settle for six months in stainless steel before bottling.
