Domaine Thillardon is one of Beaujolais’ most exciting small estates, led by brothers Paul-Henri and Charles Thillardon in the high-elevation cru of Chénas. Farming biodynamically and vinifying with a light touch, they craft wines of remarkable purity, texture, and finesse that highlight the elegance of this often-overlooked appellation.
- WINEMAKER: Paul-Henri & Charles Thillardon
- FARMING: Certified organic; practicing biodynamic with horse plowing, natural cover crops, and no synthetic inputs. All fruit is hand-harvested.
- VARIETY: 100% Gamay Noir
- TERROIR: From several parcels in Chénas at 300–400 meters elevation on decomposed granite and quartz soils. These high slopes produce structured yet ethereal Gamay with fine acidity and mineral tension.
- VINIFICATION: Whole-cluster semi-carbonic maceration in concrete tanks using native yeasts. Fermentation occurs spontaneously without temperature control. No fining or filtration; minimal sulfur added at bottling.
- AGING: Aged for 8–10 months in a combination of concrete and neutral oak barrels.
- TASTING NOTES: Aromas of red currant, pomegranate, and violet lead into a silky, lifted palate with notes of cranberry, wet stone, and herbal spice. The texture is fine and graceful, with bright acidity and a lingering mineral finish that lives up to the cuvée’s name.
