St. Innocent Winery’s “Freedom Hill” Pinot Noir is grown in the Freedom Hill Vineyard in the Willamette Valley and represents the winery’s premier single-site red from this celebrated block.
- WINEMAKER: Mark Vlossak
- FARMING: The vineyard lies in the foothills of the Coast Range, 10 miles southwest of Salem, Oregon, planted on sedimentary soils with southwest exposure that yields concentrated Pinot.
- VARIETY: 100% Pinot Noir
- TERROIR: Freedom Hill Vineyard sits at an elevation of around 520-580 feet on old sedimentary soils with a warm day/ cool night regime. The site’s natural conditions contribute energy, tension and complexity to the wines.
- VINIFICATION: Grapes are hand-harvested and destemmed. Fermentation takes place in small stainless-steel fermenters with native yeasts, followed by gentle pressing. The wine is aged in French oak barrels (22% new) for about 16 months before bottling.
- AGING: The wine was matured for approximately sixteen months in French oak barrels (with ~22% new oak in the 2020 vintage) before bottling. Aging is designed to integrate structure and support the site character without overshadowing it.
- TASTING NOTES: The 2021 shows deep red and blue fruits—black cherry, blueberry—along with forest floor, spice, dried citrus peel and mineral tension. It is silky and enveloping, with a backbone of acidity and fine-grained tannins that promise age-worthiness.
