- VINIFICATION: Pneumatic press at very low pressure. Slow natural-yeast fermentation in stainless steel.
- AGING: Matured on fine lees in stainless steel for several months. Bottled in the spring after harvest.
- TASTING NOTES: Floral and spicy aromas, with lychee and rose petal notes. Generous, ample palate with lively acidity and a refreshing finish. Off-dry, with residual sugar around 33 g/L.
- FOOD PAIRINGS: Rich pâtés, foie gras preparations and strong cheeses. Pairs especially well with spicy Asian cuisine.
