Periklis and Stergios Tatsis farm some of the oldest Xinomavro vines in Goumenissa with steadfast commitment to organics and biodynamics. “Old Roots” highlights 70-year-old ungrafted vines and showcases the brothers’ low-intervention approach, producing one of northern Greece’s most authentic expressions of this grape.
- WINEMAKER: Periklis and Stergios Tatsis.
- FARMING: Organic and biodynamic (uncertified).
- VARIETY: 100% Xinomavro from vineyards up to 70 years old.
- TERROIR: PGI Macedonia. Vines planted at 350–400 m on sloping clay and sandy loam soils. Semi-continental climate with snowy winters, hot summers, and rainfall of 400–600 mm/year. No artificial irrigation. Vineyard mesoclimate is shaped by northerly Vardaris winds, low humidity, and almost no spring frosts.
- VINIFICATION: Destemmed; classic red fermentation with native yeasts; no additives (enzymes, proteins, etc.); controlled temperature during fermentation. No fining or stabilization.
- AGING: Aged over 12 months in 500 L American oak barrels; bottled unfined and unfiltered.
- TASTING NOTES: Dense and structured, showing the wild character of old-vine Xinomavro: red currant, sour cherry, dried tomato, olive, and herbal spice. Firm tannins and bright acidity drive a savory, earthy palate with smoky undertones and a long, grippy finish.
- FOOD PAIRINGS: Herb-roasted lamb, tomato-braised meats, grilled mushrooms, charcuterie, and aged cheeses.
