VINIFICATION: Hand-harvested at dawn in cool conditions (48°F), destemmed, and cold soaked for three days to optimize gentle extraction of tannins, color, and aromatics. Fermented in small lot (¾ ton) open-top fermenters, punched down by hand 2–3 times daily. Pressed to barrel for malolactic fermentation.

AGING: 28 months in 100% French oak (70% new, 30% once-used); each barrel hand-racked three times. Bottled using methods focused on long-term age-worthiness.

TASTING NOTES: Medium to full-bodied and age-worthy, with layers of blackberry, plum, cherry, and dark chocolate. Medium to full, firm tannins with hints of jam and cooked fruits on the finish. Classic Bordeaux-styled Napa Cabernet, with a long, pleasant mouthfeel that softens with age.
