VINIFICATION: Whole-cluster pressed; spontaneous fermentation with native yeasts in concrete vats. Malolactic fermentation is allowed.

AGING: Aged for 6–8 months in neutral oak barrels and old demi-muids. No bâtonnage. Bottled unfined and unfiltered.

TASTING NOTES: Aromas of almond blossom, fennel, and wet stone lead into a broad yet restrained palate. Notes of white peach, hazelnut, and lemon curd are balanced by saline minerality and a quietly persistent acidity. Textural, but never heavy.
