A cool, Atlantic-influenced climate with dramatic diurnal swings preserves acidity and aromatic intensity.

VINIFICATION: Grapes are hand-harvested and whole-cluster pressed; spontaneous fermentation with native yeasts in used 1,000L Stockinger Austrian oak foudres. Full malolactic fermentation is allowed to enhance texture and depth.

AGING: Aged for 9–10 months in large neutral oak on fine lees with minimal bâtonnage. Bottled unfined and unfiltered.
