Stéphane Coquillette, based in Chouilly, represents the fourth generation of a Champagne-growing family known for its precise, grower-produced wines that balance depth and finesse. Working exclusively with Premier Cru and Grand Cru vineyards, Coquillette crafts terroir-driven Champagnes that showcase both chalky minerality and generous fruit expression. ‘L’Entrecoeur’—a cuvée whose name means “between hearts”—is a pure reflection of his meticulous vineyard work and low-intervention cellar philosophy.

- TERROIR: Sourced from Premier Cru vineyards in the Montagne de Reims and the Côte des Blancs. The chalk and limestone soils of these sites lend vibrancy and mineral tension, while south-facing exposures contribute to ripe, expressive fruit.
- VINIFICATION: Grapes are hand-harvested and fermented in stainless steel with partial malolactic fermentation to balance freshness and texture. Each vineyard parcel is vinified separately before blending.
- AGING: Aged on lees for approximately 36 months before disgorgement to develop aromatic complexity and a fine, persistent mousse. Bottled with a moderate Brut dosage to maintain tension and balance.
