Domaine Chapel, founded by David and Michele Chapel, is dedicated to producing site-specific, organically farmed wines in Beaujolais. With a Burgundian influence and a commitment to minimal intervention, their wines highlight the purity and elegance of each terroir.
- WINEMAKER: David & Michele Chapel
- FARMING: Organic (practicing)
- VARIETY: Gamay
- TERROIR: 2022 marks the first vintage produced exclusively from the high-altitude Poullet parcel. The 1-hectare, east-facing vineyard sits on granite bedrock with soils composed of pink granite, sandstone, and weathered rock fragments. Vines are gobelet-trained and planted at high density, with an average age of 40–60 years.
- VINIFICATION: Whole-cluster, semi-carbonic maceration with indigenous yeasts. Fermentation lasted three weeks with whole berries before pressing.
- AGING: Aged for eight months in cuve; bottled unfiltered.
- TASTING NOTES: Aromas of red berries, violets, and crushed granite. Silky tannins, bright acidity, and a mineral-driven finish highlight this high-altitude site.
- FOOD PAIRINGS: Roast quail, duck confit, grilled eggplant, or charcuterie.
