• VINIFICATION: Hand-harvested with strict berry selection; destemmed with 12 hours of skin contact; gentle pneumatic pressing followed by 12-hour settling; fermented in temperature-controlled stainless steel tanks using indigenous yeasts.
• AGING: After 5 weeks, partially racked into a separate stainless steel tank to preserve primary fruit characteristics; remaining juice racked into large, neutral Acacia oak barrels with fine lees; aged until blending and bottling in April.
• TASTING NOTES: Aromas of ripe honeydew melon, yellow apple, and a touch of quince. The palate is juicy with subtle exotic hints, pronounced herbal and spicy notes, and a classic peppery finish. Bone dry with a vivid, elegant finish.
