- TERROIR: From estate vineyards in the Coteaux du Loir, where vines grow on a mix of flinty clay and limestone soils. The northern Loire’s cool climate and stony subsoils lend natural acidity, subtle spice, and fine tannins to this heritage variety.
- VINIFICATION: Grapes are hand-harvested and destemmed, then fermented with native yeasts in stainless steel to preserve freshness and aromatic purity. Gentle maceration highlights the variety’s signature peppery character without excessive extraction.
- AGING: Aged briefly in stainless steel and neutral oak to integrate texture while maintaining vibrancy. Bottled unfiltered with minimal sulfur.
