VINIFICATION: Manual harvest into 15kg boxes. Grapes destemmed. Fermentation 80% stainless tanks 20% earthenware jar. Cold maceration followed by fermentation in stainless steel using native yeasts; no malolactic fermentation. Free SO2: 20 mg/l.
