Gooseneck Barnacles in Brine (Reserve), Wildfish Cannery, Alaska (6oz)
Hand-harvested by diver Evan O’Brien along the remote coast of Sitka, Alaska, these gooseneck barnacles are packed in brine and preserved with their prehistoric-looking shells intact. Once a delicacy reserved for the Iberian Peninsula, this rare conserva is now available in extremely limited quantities—just 300 tins produced.

VARIETY: Gooseneck Barnacles (Pollicipes polymerus)
PREPARATION: Hand-harvested and packed in brine with shells included, following traditional European methods
TEXTURE: Firm and chewy, similar to razor clams or tender squid
FLAVOR PROFILE:
Aromas: Sea spray, mineral brine, and a touch of ocean funk
Palate: Salty, subtly sweet, with flavors reminiscent of green olives and seaweed
Finish: Clean, briny, and lingering
PAIRINGS:
Albariño, Txakolina, or crisp pét-nat
Sake, dry cider, or chilled vermouth
Premium butter, boiled potatoes, crusty sourdough
SERVING SUGGESTIONS:
