Founded by Sandra Tavares da Silva and Jorge Serôdio Borges in 2001, Wine & Soul focuses on small-production wines from historic vineyards in the Douro Valley. The duo is dedicated to showcasing native Portuguese varieties through low-intervention farming and vinification, often working with centenarian vines in steep, schist-laden terrain.
-
WINEMAKER: Sandra Tavares da Silva and Jorge Serôdio Borges
-
FARMING: Sustainable practices
-
VARIETY: Field blend of over 30 native Douro varieties, predominantly Touriga Franca, Touriga Nacional, and Tinta Roriz
-
TERROIR: Sourced from old vines averaging 50 years of age, planted at 450 meters elevation in the Cima Corgo subregion of the Douro Valley; soils are predominantly schist with excellent drainage and low fertility, promoting concentration in the grapes.
-
VINIFICATION: Grapes are hand-harvested, foot-trodden in traditional granite lagares, and fermented with native yeasts.
-
AGING: Aged for 18 months in 20% new and 80% used French oak barrels.
-
TASTING NOTES: Expressive aromas of blackberry, cassis, and dark plum layered with violets, licorice, and hints of crushed stone. Full-bodied with firm tannins, fresh acidity, and a long, mineral-driven finish showing notes of dark chocolate and spice.
-
FOOD PAIRINGS: Grilled lamb chops, roasted duck, wild mushroom risotto, aged Portuguese cheeses.
-
SCORES: 95 points – Wine Advocate; 94 points – Wine Spectator
