Known for its uncompromising dedication to organic farming and traditional methods, the estate is a beacon for those seeking soulful, terroir-driven wines. 'Pagliaro' is a pure expression of Sagrantino, showcasing the grape’s bold structure and complexity.
- WINEMAKER: Giampiero Bea
- FARMING: Certified Organic; practicing Biodynamic
- VARIETY: 100% Sagrantino
- TERROIR: Sourced from the Pagliaro vineyard, a 6-hectare site at 1,300 feet above sea level, with clay and limestone soils that provide richness and structure. The climate is Mediterranean with cooling breezes that balance ripeness and freshness.
- VINIFICATION: Fermented spontaneously with indigenous yeasts. Macerated on skins for 30+ days to extract deep color and flavor. Minimal intervention throughout the process, with no added sulfites.
- AGING: The wine is aged for one year in stainless steel tanks to maintain freshness and primary fruit characteristics. It then spends an additional two years in large Slavonian oak barrels, allowing for gradual development and integration of complex flavors. Finally, the wine is bottled unfiltered and rests for another year before release, ensuring harmony and readiness for consumption.
