Johannes Zillinger, a pioneering winemaker in Austria's Weinviertel region, is celebrated for his commitment to organic and biodynamic viticulture. The 'Revolution' White Solera is a distinctive non-vintage blend that exemplifies his innovative approach, combining traditional methods with creative winemaking techniques to produce a complex and expressive wine.
- WINEMAKER: Johannes Zillinger
- FARMING: Certified organic and biodynamic (Demeter certified)
- VARIETIES: Approximately 50% Chardonnay, 25% Riesling, and 25% Scheurebe
- TERROIR: Sourced from the Hohes Eck and Lissen vineyards in the Weinviertel, characterized by diverse soils including loess, clay, sand, and calcareous sandstone, contributing to the wine's mineral complexity.
-
VINIFICATION:
- Chardonnay: Hand-harvested and underwent approximately ten days of skin fermentation in 1,000-liter Georgian qvevri (amphorae). Post-fermentation, the wine was pressed and returned to the qvevri for further aging.
- Scheurebe: Sourced from vintages spanning 2017 to 2022, with fermentation initiated on the skins. After fermentation, the wine was aged in 600-liter acacia and oak barrels.
- Riesling: Derived from a solera system initiated in 2013, encompassing vintages up to 2022, aged in 600-liter barrels and stainless steel tanks.
- The final blend was assembled and bottled in March 2023, with minimal sulfur addition (30 mg/L total sulfur), a pH of 3.25, and 1 gram of residual sugar.
- AGING: Aged on fine lees in a combination of amphorae, acacia, and oak barrels, utilizing a solera system to enhance complexity and depth.
- TASTING NOTES: Presents a medium, slightly cloudy straw yellow hue. The nose offers a creamy bouquet of lilac, nutmeg, yellow apples, and peaches, accompanied by nutty nuances, blond tobacco, and herbal spices. On the palate, it is spicy and slightly phenolic, with pronounced salinity and a full-bodied texture. The fine acidity and juiciness, attributed to the Scheurebe, lead to a melting finish with a light veil of yeast, vibrant minerality, and subtle smokiness.
- FOOD PAIRINGS: Complements dishes such as risotto with glazed peaches and chanterelles, chicken with peppers and Thai chili sauce, or chicken teriyaki with sesame miso mayo.
