- VINIFICATION: Fermented with indigenous yeasts in a combination of stainless steel and oak barrels. Malolactic fermentation is encouraged, followed by extended aging on the lees for added texture and complexity.
- AGING: 24+ months on lees before disgorgement; finished with a low dosage of 4g/L.
