Between Jura and Savoie lies the tiny appellation of Bugey Cerdon, home to fewer than 500 acres of vineyards and known exclusively for its singular sparkling style—the Méthode Ancestrale Rosé Demi-Sec. Here, Marcel Perinet of Domaine de la Dentelle crafts one of the most refined and naturally expressive versions of this traditional wine. A former restaurant director who spent over forty years with 3-Michelin-star chef Georges Blanc, Perinet brings the same precision and attention to detail to his winemaking, producing a vibrant, low-sulfur rosé that balances purity, freshness, and gentle sweetness.

- TERROIR: The six-hectare estate sits high on the steep, clay-and-limestone hillsides above the village of Gravelles in the Ain department, at a site known as La Croix de la Dent. Old vines—Poulsard averaging 100 years and Gamay around 40—grow in well-drained, mineral soils that give the wine its characteristic freshness and lift.
- VINIFICATION: Produced via the traditional méthode ancestrale, in which the wine undergoes a single, interrupted fermentation that resumes naturally in bottle to create its fine mousse. Grapes are hand-harvested and pressed whole-cluster in a bladder press, with only the heart of the juice retained. Fermentation occurs without sulfur or additives. The wine spends an exceptional 12 months on its lees—far longer than the AOP’s minimum two months—adding depth and texture before bottling. Though always from a single vintage, it is labeled non-vintage.
- TASTING NOTES: Pale ruby-pink with a fine, persistent sparkle. Aromas of wild strawberry, raspberry, and rose petals lead to a softly off-dry palate that balances bright acidity with gentle sweetness. Notes of fresh red berries, crushed herbs, and a saline edge give it lift and elegance. The finish is pure, refreshing, and remarkably clean.
