From the village of Magny-lès-Villers, Domaine Hoffmann-Jayer crafts distinctive wines that reflect the rugged limestone soils and cool elevations of the Hautes-Côtes. This singular white, blending Chardonnay and Pinot Blanc, comes from a steep, stone-strewn vineyard planted in the early 1950s. It’s an expressive example of how thoughtful élevage and old vines can yield both structure and mineral clarity in this high-altitude corner of Burgundy.

- TERROIR: From a one-hectare parcel in the Les Vallerots lieu-dit in Magny-lès-Villers, perched high in the Hautes-Côtes de Beaune. The vines, planted in the early 1950s, grow on steep, rocky limestone slopes rich in stones and clay-limestone colluvium, producing wines that balance ripe fruit with tension and minerality.
- VINIFICATION: Grapes are hand-harvested and vinified with minimal intervention. Fermentation occurs with native yeasts to preserve purity and site expression.
- AGING: Two-thirds of the cuvée ages 15 months in new, low-toast 350-liter oak barrels, while one-third matures in terracotta jar to maintain freshness and texture. The wine is then blended and allowed to settle for six months in stainless steel before bottling.
- TASTING NOTES: Structured yet finely etched, the 2020 ‘Les Vallerots’ shows aromas of white pear, lemon oil, and crushed stone. The palate is saline and stony, with a sleek core of citrus and orchard fruit framed by subtle oak spice and firm mineral tension. The finish is long, chalky, and refreshingly precise.
