Founded in 1974 by Pat and Joe Campbell, Elk Cove Vineyards is one of Oregon's pioneering wineries, renowned for its commitment to estate-grown wines that reflect the unique terroir of the Willamette Valley. Under the stewardship of second-generation winemaker Adam Campbell, Elk Cove continues to produce expressive and balanced wines, with a focus on sustainability and minimal intervention.
-
WINEMAKER: Adam Campbell & Heather Brooks
-
FARMING: Sustainable practices
-
VARIETY: 100% Riesling
-
TERROIR: Sourced from three estate vineyards—Winery Estate, Five Mountain, and Windhill—featuring some of Oregon's oldest Riesling vines planted in 1975. These sites benefit from the Willamette Valley's cool climate and diverse soils, contributing to the wine's complexity and vibrant acidity.
-
VINIFICATION: Grapes are hand-harvested and whole-cluster pressed. Fermentation occurs at very cool temperatures in small stainless steel tanks to preserve aromatic intensity and varietal purity.
-
AGING: Aged in stainless steel to maintain freshness and highlight the wine's crisp profile.
-
TASTING NOTES: Aromas of yellow peach, pineapple, honey, ginger, and bread dough lead to a light-bodied palate with ripe tropical flavors and spicy accents. Racy acidity balances nine grams of residual sugar, culminating in a long, flavorful finish.
-
FOOD PAIRINGS: Ideal with spicy Asian cuisine, grilled seafood, or fresh salads.
