Allouchery-Bailly ‘Diapason’ Premier Cru Brut, Montagne de Reims, Champagne, France NV
Diapason is the entry cuvée of Champagne Allouchery-Bailly, built as a unifying blend that presents the house style across the three principal grapes of Champagne. It draws on fruit from the house’s own vineyards and is designed to be the reference point for everything else the house makes.
- Farming: Certified sustainable. VDC (Viticulture Durable en Champagne) and HVE (Haute Valeur Environnementale).
- Variety: 39% Meunier, 37% Pinot Noir, 24% Chardonnay
- Terroir: Premier Cru estate vineyards in the villages of Ecueil, Villedommange, Sacy, and Chamery, Montagne de Reims, Champagne. Soils of clay, limestone, loam, and sand.
- Vinification: Hand harvested and pressed in a pneumatic press. Fermented in stainless steel. Includes 30% reserve wine. Dosage 7.9 g/L.
- Tasting Notes: A lightly amber color. The nose is youthful and lively, with a floral lift. The entry is juicy and generous, with ripe peach and apricot. The palate holds a taut tension of white fruit, with pear and greengage plum. The finish brings licorice and elderflower, and the acidity stays fresh through to a distinct chalky mineral note. The dosage keeps the fruit in balance without sweetness.
- Food Pairings: Roast chicken or pork with stone fruit or apple glaze, where the peach and apricot notes echo the sauce. Seared scallops or sole with brown butter, where the acidity lifts the richness. Mushroom risotto or fried chicken. Soft cheeses such as Reblochon or aged Gouda.
