The village sits on a deep subsoil of Belemnite chalk, which retains moisture while providing excellent drainage and imparting the piercing minerality and taut acidity characteristic of wines from this commune. Maison Jean Pernet's 17-hectare estate spans Le Mesnil-sur-Oger, Vertus, Chouilly, Épernay, Chavot, and Leuvrigny; fruit for this cuvée is drawn from Grand Cru Chardonnay parcels centered on Le Mesnil.
- VINIFICATION: Fermentation in stainless steel tanks, with vinification conducted parcel by parcel to preserve individual terroir expression. Approximately 50% reserve wines incorporated into the blend. Dosage: 7 g/L (Brut).
- AGING: Aged on the lees for a minimum of 36 months prior to disgorgement.
- TASTING NOTES: Pale gold with fine, persistent mousse. The nose opens with roasted almonds, lemon zest, golden apple, and jasmine, with a thread of brioche emerging with time in the glass. On the palate, the wine is medium-bodied with high, well-integrated acidity and a chalky mineral backbone. Flavors of ripe yellow apple, pear, and nougat are balanced by cream and biscuit notes derived from extended lees contact. The finish is long and clean with a characteristic flinty edge.
