Founded in 2017 by husband-and-wife team Dan and Jacqueline Person and now based in Sonoma, Carboniste makes California sparkling wine that sidesteps the Champagne template in favor of ripe, fruit-forward wines at gentler pressure. Each cuvée is handled according to its fruit rather than a single method, so the wines are not strictly pét-nat, méthode traditionnelle or méthode ancestrale. Dan trained at Schramsberg and staged at Domaine de la Romanée-Conti; Jacqueline came to the project after consulting for Naked Wines.

VINIFICATION: Barrel-aged reserve wines are blended with younger wines, then carbonated by CO2 injection rather than secondary fermentation in bottle. The wine is carbonated to a lower level (3.5 atmospheres of pressure, frizzante) for a softer mousse. It is bottled under crown cap, ready to drink, with no dosage and no residual sugar.
- Analysis: 12.2% ABV, TA 5.93 g/L, pH 3.46.
- AGING: Built on a perennial reserve of mature wines. Lots from 2021, 2022, 2023 and 2024 are blended and continue to age on yeast in neutral barrels, and each bottling combines this aged reserve with young wine.
- TASTING NOTES: Candied citrus and stone fruit lead a rich, juicy palate, with lemony apple and a savory, saline edge. Extended barrel and lees contact adds body and richness. The low-pressure mousse is gentle, and the wine is dry, with acidity keeping it fresh.
