Sébastien Christophe represents Chablis's newest generation — hard-driving, tradition-literate, and clear-eyed about what a changing climate means for these slopes. He began in 1999 with a half-hectare of Petit Chablis inherited from his grandfather and has since built the domaine parcel by parcel to roughly 9 hectares, including premier cru holdings in Fourchaume, Montée de Tonnerre, and Mont de Milieu. Based in Fyé on the right bank of the Serein — the grand cru side of the river — his wines are spare, vertical, and mineral-driven, often drawing comparisons to the Loire more than the Côte d'Or.

- Aging: Stainless steel, 7–8 months; fined with bentonite and filtered with diatomaceous earth.
- Tasting Notes: Preserved lemon, wet stone, flint, and dried herb; taut and saline on the palate with more textural weight than the appellation typically suggests.
- Food Pairings: Raw oysters, other shellfish, or on its own as an aperitif.
