Led by Rebeckah Burnette — Certified Cheese Professional and someone who has literally followed a goat shepherd through the Italian Alps — we'll be discovering why American cheeses are no joke. We'll be tasting through the highest-awarded cheeses from American creameries in this tasty class.

About the educator:
Rebeckah Burnette is a Certified Cheese Professional (ACS-CCP) whose path through the world of cheese reads less like a résumé and more like a well-planned eating tour. She spent years working across nearly every facet of farmstead production at Valley Shepherd Creamery in New Jersey's Long Valley — from the make room to the aging caves to the farmers market table — before heading west to Humboldt, California, where she developed plant-based cheese alternatives for a wood-fired kitchen at Heartwood Mountain Sanctuary.
Her curiosity eventually took her to Italy, where she received a Bachelors of Science degree in Gastronomic Sciences at the University of Gastronomic Sciences (UNISG) in Pollenzo — home to the biannual CHEESE festival, one of the world's foremost gatherings of artisan cheesemakers. The highlight? A summer spent with a goat shepherd in the mountains of Northwest Italy during his seasonal transhumance, supporting traditional alpeggio cheesemaking at elevation.
Today, Rebeckah brings that breadth of hands-on experience to her role as Harvest Manager at Meadowood Farms — and to the classroom, where she's as comfortable talking milk chemistry as she is recommending the perfect pairing.
