Domaine Gautheron has farmed in Fleys, a small village just east of Chablis overlooked by the Les Fourneaux slopes, since 1809. Cyril Gautheron represents the seventh generation to work the family's 30 hectares, continuing alongside his father Alain and partner Agnès Gleizes. The estate favors a hands-off, protective approach to winemaking — avoiding oak entirely on their village and Petit Chablis bottlings — to let the region's chalky Kimmeridgian soils speak clearly through the wine.

FARMING: Certified HVE Level 3 (Haute Valeur Environnementale, France's highest sustainability certification), held since February 2020
VARIETY: 100% Chardonnay
TERROIR: Chablis AOC, Burgundy. Vineyards around Fleys on Kimmeridgian limestone and chalk soils, on south-facing slopes typical of the appellation.
VINIFICATION: Fermented and matured entirely in vat, avoiding wood to preserve fresh, steely flavors and allow the chalky vineyard soils to come through clearly.
AGING: In stainless steel tank; no oak.
TASTING NOTES: Fresh, floral aromas and appley fruit lead into a rich, complex mineral character drawn from the chalky soils. Bone dry, medium-bodied, and steely, with a lively, balanced citrus finish.
FOOD PAIRINGS: Oysters, shellfish, grilled fish, or regional Burgundian fare like parsley ham or soft cheeses.
