PSI is a collaborative, grower-centric project initiated by Peter Sisseck and Pablo Rubio, aimed at supporting old-vine Tinto Fino (Tempranillo) growers in Ribera del Duero with organic and biodynamic practices. The intention is to express the region’s soul while giving value and agency back to small producers. (PSI = the 23rd Greek letter.)
- WINEMAKER: Peter Sisseck & Pablo Rubio, working with vineyard collaborators
- FARMING: Emphasis on organic and biodynamic conversion; growers are incentivized to maintain old bush vines and reduce inputs.
- VARIETY: Primarily Tinto Fino (Tempranillo); a small percentage (~8–10 %) Garnacha is often included in the blend.
- TERROIR: Vineyards across high-elevation parcels (approx. 850–950 m) in Ribera del Duero on clay-limestone (calcareous) soils, drawn from many old, low-yielding plots.
- VINIFICATION: The fruit is harvested by hand, then fermented in concrete vats using native yeasts with gentle extraction. After alcoholic fermentation, the wine remains for malolactic conversion in concrete or large vats, with blending carried out before final élevage.
- AGING: The wine is aged for approximately 15 months in a mix of foudre, concrete tanks, and used oak barrels (no or minimal new oak) to allow the expression of fruit and terroir without heavy wood influence.
- TASTING NOTES: The 2022 PSI is described by the Wine Advocate as “clean, expressive and open,” with a perfumed, floral character, elegance, and restrained heat. Expect bright red and dark berry fruit, herbal lift, fine tannins, and refreshing acidity.
