Figaro is a small-format, mixed milk cheese from Andante Dairy, wrapped in wine-soaked fig leaves that lend a subtle, herbaceous perfume and a whisper of tropical fruit. Made from a blend of Jersey cow’s milk and goat’s milk, the paste is creamy and rich, with tangy brightness from the goat’s milk balanced by the depth and sweetness of Jersey cream. The fig leaves add aromatic complexity—evoking coconut, vanilla, and green tea—while the white wine soak ties it all together with acidity and floral lift. Created by cheesemaker Soyoung Scanlan, Figaro is inspired by the Mediterranean climate of coastal California and the ancient tradition of leaf-wrapping cheese for flavor and preservation.
