Bellwether Farms was founded in 1986 in Sonoma County by the Callahan family, who established the first sheep dairy west of the Rockies on hillsides just a few miles from the Pacific. Owner Liam Callahan has built the creamery's reputation on a "whole is better" philosophy: full-fat, minimally processed milk from a small network of local sheep dairies, made using traditional, small-batch methods. The Sonoma Herbs log is a savory expression of Bellwether's fresh sheep cheese line, made through slow culturing and traditional bag-draining, then rolled in a blend of herbs and spices sourced to reflect the flavors of the surrounding Sonoma County landscape.
