Founded in 2012 by former chefs Marty Winters and Alex Pitts, Maître de Chai sources from heritage California vineyards and favors minimal intervention in the cellar. Its Red Table Wine is a light, everyday red built around old-vine Central Valley fruit.
- WINEMAKER: Marty Winters and Alex Pitts
- VARIETY: Cinsault, Mourvèdre, Carignan, Zinfandel
- TERROIR: Lodi and Contra Costa County, California. Sandy soils in the Sacramento River Delta, where cool night breezes help preserve acidity.
- VINIFICATION: Zinfandel from Stampede Vineyard and Cinsault from Sprague Vineyard, both in Lodi. Mourvèdre, Carignan and Zinfandel from the 1890s plantings of Evangelho Vineyard in Contra Costa County are co-fermented. Native yeast fermentation in traditional open-top fermenters.
- AGING: Eleven months in a combination of puncheons and barriques.
- TASTING NOTES: Lifted, juicy red fruit leads, with a gentle herbal edge. Light-bodied with a supple, energetic texture, mellow tannins and a bright finish.
- FOOD PAIRINGS: Roast chicken, grilled vegetables, sausages, tomato-based pastas and weeknight fare. Serve slightly chilled in warm months.
