Paul Pernot 'Les Réversées' 1er Cru Blanc, Beaune, Burgundy, France 2024
Domaine Paul Pernot's roots in Puligny-Montrachet stretch back seven generations, and the domaine in its current form was established by Paul Pernot senior in the 1950s, beginning with approximately 10 hectares of vineyards many of which he replanted himself. Over the following decades the estate grew to 23 hectares, with some 14 hectares in Puligny-Montrachet alone — including parcels in Bâtard-Montrachet and Bienvenues-Bâtard-Montrachet — making it one of the most significant domaines in the appellation alongside Leflaive. Paul's sons Michel and Paul joined in the 1970s; today three generations manage the estate together. A long-standing supply agreement with Joseph Drouhin means approximately 80% of the crop is sold; the wines bottled under the domaine label represent the finest selected parcels. The house style is consistently described as classically Puligny: rounded in texture, supple and creamy without heaviness, mineral without austerity, with moderate oak and an emphasis on freshness and early bottling. The Beaune Réversées blanc is a rare expression — white Beaune Premier Cru is exceptionally uncommon, and this cuvée reflects the domaine's growing portfolio beyond Puligny.
- Winemaker: Michel Pernot and Paul Pernot fils; with Paul Pernot senior
- Farming: Sustainable. No herbicides; soils ploughed. Debudding used to control yields. Hand harvested.
- Variety: Chardonnay 100%
- Terroir: Les Réversées 1er Cru, Beaune AOC, Côte de Beaune, Burgundy. Les Réversées is a Premier Cru vineyard on the eastern face of the Montagne de Beaune at approximately 230 meters elevation, with east-facing exposure that captures morning sun and moderates afternoon heat. Soils are clay-rich limestone — the calcareous marl characteristic of the Côte de Beaune — imparting fine mineral structure and an elegant, precise style. White Beaune Premier Cru is a rarity; Beaune's Premier Cru vineyards are overwhelmingly planted to Pinot Noir.
- Vinification: Grapes pressed, must settled for 24 hours, then racked to barrel for fermentation with indigenous yeasts. Minimal lees stirring during fermentation; no stirring during aging.
- Aging: Barrel fermented and aged in French oak (approximately 20–25% new, lightly toasted) for Premier Cru wines. Light fining; light filtration before bottling. Early bottling to preserve freshness.
- Tasting Notes: Pale gold with green highlights. Precise and mineral-driven on the nose, with white flowers, ripe pear, citrus zest, and a chalky stone undercurrent. The palate is supple and well-rounded, with lively acidity, a creamy mid-palate texture, and a long, clean, mineral finish — elegant and poised.
- Food Pairings: Grilled turbot, lobster bisque, seared scallops, poultry with cream sauce, and aged Comté.
