Tuna Fillets in Thyme and Olive Oil, Santa Catarina, Azores, Portugal (120g)
Pole-and-line skipjack fillets, hand-packed in olive oil with a sprig of thyme.
Santa Catarina has carried on São Jorge’s canning tradition, which dates to the 1940s, since the company was founded in 1995. Its single seaside cannery in Calheta makes only canned tuna. Each fish is caught one at a time by pole and line in Azorean waters and comes to the factory fresh. There a mostly female local workforce cooks it, cleans away skin, bone, and dark meat, and trims it into fillets, all by hand. These fillets are packed in olive oil with thyme and a touch of salt. Thyme brings a dry, savory, gently floral herb note that suits the tuna’s firm texture and clean, mild flavor. The cannery uses no additives or preservatives.
