Organic Washed-Rind Raclette-Style Cow’s Milk Cheese with a Mild, Tangy Paste and Meaty-Earthy Aroma
Nicasio Valley Cheese Company is run by the Lafranchi family on the Marin County ranch Swiss immigrant Fredolino Lafranchi founded in 1919. His son Will traveled back to Maggia, Switzerland to taste the local cheeses, and the family began making their own in 2010 with help from Maggia cheesemaker Maurizio Lorenzetti. Their entire herd is certified organic and rotationally grazed. San Geronimo, created in 2011, is a washed-curd cheese: whey is replaced with water during production to lower acidity and keep the flavor mild. Wheels are then brine-washed, which gives the thin rind its yellow-orange color and savory aroma. It sits between Raclette and Fontina and melts very well.
Serving: Bring to room temperature. Good for melting over potatoes, burgers, or toasted sandwiches, or as a raclette substitute.
