Small Scallops in Galician Sauce, Conservas de Cambados, Spain
Pickup currently unavailable
Conservas de Cambados was founded nearly four decades ago by mussel wholesaler José Luis Alfonso to produce premium conservas from Galician seafood, starting with mussels from the nearby Ría de Arousa. The company is now run by his children, Maite and Keko. It has expanded its sourcing to other parts of Spain while keeping small-batch production at its factory in the province of Pontevedra, where about 50 artisans, mostly women, process the seafood by hand. The packaging design references the fishing nets of the Galician coast. These small scallops (zamburiñas) come from the Galician rías. They are shucked and cleaned by hand, rinsed in seawater, and gently cooked, then packed in a house-made salsa gallega of Spanish olive oil, sautéed onion, tomato, and sweet paprika.
